Mmmm - I love eggs and can't wait to try this. I'm going to make it for my mom when I visit. Thanks.

Egg and Green chile casserole

Preheat oven to 350 degrees.  Add non-stick spray to 13 by 9 casserole dish.

Beat together:

12 eggs

Add:

1 large can of diced green chiles (7 oz)
1/2 cup milk
Sharp cheddar cheese - I didn't measure, but it was probably around 1 1/2 cups
Crumbled bacon strips - 4 or 5 (or you could add sausage or ham)

Lightly mix.

Bake.  Serve with fresh fruit.  Also, nice with salsa, hot sauce or sour cream.

I am not an "egg" person.  I usually don't like them.  I loved this dish!
